I think any medium-large mammal heart is best braised, frankly. Lots of fat and tubes and stuff that need to become tender.

I made a stew with Lamb's heart and shoulder and it was really good.

The fat on lamb heart is delicious. I’d boil it with some veg and herbs. This was my lunch a couple of days back. Memelessly delicious.

Trim some fat, leave some fat on. Chop that shit up and use it in a stew or a mincemeat pie.

I mostly eat pig hearts. I like to stuff them with parsley and braise them. Amazing gravy.

Ox hearts I almost only ever have as mince. Either 100% heart or mixed with "normal" meat. If you mince it you want to open it up first and remove some of the connective tissue. There will be strings and valves inside it that are no good for eating.

My mother makes beef heart stew in a slow cooker with vegetables and cream of mushroom soup. It's great.
