When you make something for the first time, follow the recipe exactly or as close as you can. Leaving shit out or only adding half of an ingredient because you thinks it's too much is just asking for your food to turn out bad.

Corollary to this rule: Most recipes are stupid and wrong so you'll eventually have to fix them yourself anyway, however don't do it the first time you cook them. The first go is a test run. You should follow the recipe exactly with the understanding that the food will be terrible because the recipe sucks, and only the second attempt, after the appropriate corrective measures, will be okay.
