Is it smoked or unsmoked? Try coating it in salt(if unsmoked, leave it out if smoked) mustard powder, honey and sear it in butter before finishing it in the oven for 20 minutes or so.

I have not idea if that would work. Im make an okay broth from freezer burned porkchops before. But I know almost nothing about making ramen other than its rolled noodles in broth.

For those, I do a 50/50 honey & soy sauce marinade, let em' soak overnight, & quick grill em' up. I have a hankerin' for those every once in a great while, & that's how I do them.

My grandma used to add it to a pot of beans. She was a child of the depression so using actual ham in beans instead of a hambone was a status symbol to her.

You can make stock from the ham bone. Making it from a ham steak would be wasteful.
