I always order poached just so the server can say "uh do wha" and walk all the way back to the kitchen to ask if jesus can poach an egg. Ive only had three say they can poach an egg. From there its sunny side up...but i become demanding and want the yolk set but not hard. I usually have to send them back for being under. I poke holes in rhe runny yolk so they have to start over. Only 4 or 5 restaurants here get them right by the second try.

I work at a diner, we don't season and we reuse pans. You might get two eggs(1 laddle of pooled eggs) or you might get half of that if while scrambling i spill some out the pan. Over easy is two easy flipped then cooked a lil flipped again. Still no seasoning
