I spent about a week around the new year in Osaka and had a bunch of okonomiyaki.
I'm not a chef or even particularly interested in owning a restaurant, but I feel like okonomiyaki could really catch on if introduced in the right city(cities?) in the US. I'm honestly surprised it isn't a thing already, considering how popular ramen has become.
I'm gunna own a food truck. Not sure what stuff I'd serve, but low overhead is tempting.
