Properly cooked bacon will range from "crisp" to "chewy" depending on thickness and preference but no one likes brittle. Stop cooking the bacon a few minutes before you think it's perfect. Chewy in the pan means crisp on the plate and crisp in the pan means brittle on the plate. Can't help with temperature. Heat your plates, hold the bacon properly and work on your timing.
