Homemade sauerkraut alongside sausages is top tier food.

That sounds too simple to be good, but as it's simple I'm trying that anyway.

>water deepfried
holy shit

Same. Mostly because it's the only 100% vegetable dish I know.

I occasionally like some fried ice cubes. Try it. They're delicious with apple butter.

>Salad (greek or caesar).
>Butternut squash/mushroom risotto.
>Veggie vindaloo.

I fucking love veggie food, I went veggie for 6 months a couple of years back just to see if I could and it was SO EASY.
I fucking love meat, LOVE IT... but there's a lot of incredible veggie food.

The only reason I stopped being veggie after 6 months was the smell of bacon cooking.

But really, I make a roasted vegetable pan that goes fantastic with lamb. It's just chopped up garlic cloves, potatoes, zucchini, onions, bell peppers (green, red, maybe even yellow), italian squash, and spinich (whole leaves) coated in extra virgin olive oil and mixed with salt and herbes de provence. I mix it all in a glass casserole dish with tongs and then bake it at 400°f until the potatoes are slightly crispy and the onions are soft and opaque.
Usually about 45 min to an hour.

Fantastic with a simple Greek lamb dish.
