I do eat gluten regularly, and only get minor issues. It gets real fucking nasty if I eat too much of it, however.

How did she reintroduce gluten? Was it actual gluten isolate or was it $1 bread that was laced with pesticide and additives? If I eat that shit I feel horrible, but I'm fine eating quality bread such as Ezekiel Bread or bread I bake myself.

1. Elimination diets aren't a definitive diagnosis, they just remove the ginormous amount of variety from your diet while your gut might rest a bit, kind of the way it rests when you're put on liquids or bland foods post-surgery in a hospital.
2. There are some really massive other explanations for the metabolic processes going on in a person, from imbalances in gut flora (think antibiotic use), obesity/sugar/hormonal reason why you have gastric dumping, gas, diarrhea, etc. Someone having an all carb lifestyle all the time might yea, be eating poorly anyway.

Suggest she try a Low FODMAP diet and reduce the actual sugars that bother imbalanced gut flora through better choices of this or that after the elimination diet. Be careful you don't spout some I-know-better-than-your-so-called-doctor crap at her. People tend to idolize nutritional experts and websites like gods. They're not. Most are incredibly ignorant if not some liberal thinking pro-planet propaganda veiled as philosophies on life. Even M.D's are idiots. If your doctor didn't attend ivy league residencies, they're probably not good enough to tell you what to do, and in fact you might be smarter than them. .

Doctors are actually idiots compared to other STEM majors. They don't take any real math or physics classes and their entire plan of study consists of rote memorization. The only people who become doctors are brainlets not cut out for hard science or people privileged enough to be able to go to school for 10 years.

That has to be the most stupid comment in a week. You must never have stepped into a university. Everybody there knows that first year medical students study "hard science" exclusively. This is also done to make sure the less serious students give up before getting too far in the process.

Maths and physics aren't the most useful fields for a future doctor; chemistry and biology are far more important, and complicated.

I think you missed my point, really. I said the most competitive residencies will weed out the 1% of truly great thinkers, people with the intelligence and depth of knowledge that gives them the critical thinking skills to understand medical basis for nutritional considerations vs psuedoscience. Did your doctor go to school in another country, or an osteopath route, or state school and then a "D" hospital in a podunk municipality for residency? Did they graduate top of their class? Or just finish? What have they done since?
I am saying take your doctor off the pedestal and question, question, question. If your doctor is a specialist who teaches in a teaching hospital, fine. If your doctor is one of the above an family medicine, hrm. Do some research on your own. Demand to see a specialist.
Gluten intolerance is not a medically real diagnosis no matter how hard people want it to be the next fibromyalgia. In other words there is something else wrong for which gluten shows you the symptoms of this other thing wrong with you. But, gluten isn't to blame. You don't have to believe me.

if you're mostly European you can handle gluten, especially if it is from high-quality grain source.

if you're NOT european then you're more likely to have issues with gluten and lactose. i got a major stomach ache the other week simply from eating a Wendy's burger. but before that i was having bagels and felt fine. could be long-term build up. (i'm SE asian by the way).

BUT, having said that, it's still possible to enjoy some bread if it is incredibly high quality bread like Ezekiel or Rye, which usually runs around $5-6 a loaf. or like this guy says, just don't be lazy and go learn how to bake it yourself. get organic wheat, fresh, good yeast, etc.

The only "dumbed down" sciences with versions of these courses are allied health people and like nutritionists and nurses. Their ability to know and need to calculate half lives of medication or decaying of radiation particles is next to none.
My degree is computer science. I had every science class possible including electives I had to seek out, where I chose astronomy and biochemistry.
Be assured that in undergrad that isn't ivy league quality, no one is allowed to make more than one grade that isn't an "A" their entire 4 years of university or not make the cut to a quality medical school. The tier below these folks aren't going to vet school, aren't going to secondary schools, but seeking out osteopath routes, chiropractor fallback plans, and other crapola that means you should question their ability to be smarter than you as a diagnostician. Their inability to multi-task and being an outstanding player means they have farrrrrrr less time to rub elbows with the cream of the crop in their industry, seeing complicated cases or reading journals to stay abreast of real medicine.

My only intention was to plant doubt at the end all be all of this elimination diet diagnosis. It's an old tool. In fact, people who eliminate dairy who didn't have an issue with it before, will then nail the coffin with their body's ability to not make the enzymes to digest it anymore. Want to say goodbye to dairy forever? Stop eating it for a while, and then watch your tolerance drop to it forever.

Forget all the shitposting nutritional "secret tip" advice and realize it is not going to kill you if you skip a meal, or even pack your own. Hell, it's not even YOU that needs to deal with this.

A very recent finding (within the last year or two) showed the discovery of a reovirus that acts as an environmental trigger for gluten intolerance, which explained the discrepancy between the larger percentage of people who have the genetic markers for Celiac disease versus the actual smaller percentage of them who develop gluten intolerance. I read that scientists are further looking into this for possibly creating a vaccine against that reovirus in the future. Gluten intolerance isn’t anything to fuck with. If you continue eating it, you increase your odds of developing colon cancer. It also triggers an immune response that destroys the villi in your intestines, the tips of which produce the enzyme to break down lactose, so you can show symptoms of lactose intolerance for a few days until the intestine repairs itself. This is why some people have a hard time figuring out if it’s dairy or gluten that’s the culprit.

And to answer your question about the flour, OP, Bob’s Red Mill One-to-One baking flour is the absolute best replacement.
