Fry up a couple of chicken breasts with olive oil and garlic. Take out after done, toss in more oil, onions, cook for a while, add artichoke hearts and a can of diced tomatoes. Spice it up with herbs and whatnot. Add the chicken back in, simmer for a bit.

Serve over rice.
