Rome nearly went under a 100 years earlier. It was going to happen inevitably. Things were actually prosperous and well under Valentinian I's reign.
Rome had actually always been filled with lots of eastern religions carried over, it wasn't some great conversion for "ways of our ancestors" to Christianity.

Pauline Christianity had become the most common faith in the Empire around 280 AD. It is important to note that it was only by a small margin and the empire had a great many active faiths at the time. That margin had likely grown a not small amount by the time of Theodosius I. Him declaring it to be the state religion of the Roman Empire was likely just trying to force the other ideologies of the era out of power.
