If I kill Vordt but do not kill Dancer when she's active, can I still get invaded/summon 5 dark spirits at High Wall? Does she count as area boss not killed?

I bought DeS, DaS and DaS2.

However after releasing DLC for full game price for DaS2 and the same game again SotFS, I'm reluctant to buy DaS3 now.

I'm doubting whether to pirate and buy the "full" version with DLC later.

Is the PvP worth 40 bucks?

the "full" version with DLC will probably come like a year after the final DLC release.
You could truly just miss out on the first experience and enjoy the definitive edition later on, but by then.. people will be burned out and only tryhard shitters will be active by then. Just enjoy this version as it evolves.

After finishing the game I added myself a bunch of souls with CE to try out magic/miracles/other weapons I had passed on.
Everything was fine until today, I got the [INVALID SAVE DATA] warning, and since I'm running on a new character just said whatever, and deleted the character I added souls to.

IIRC open the main door of the Cathedral of the Deep, talk to Siegward in the well outside the Cleansing Chapel bonfire, and don't kill any of the giants. He should appear by the main door you opened.

You must not have already been tricked by Patches in Firelink.

Open the main door of the cathedral and reload the area. (meaning a trip to firelink or using a bone I think. Not 100% sure here)
