My only suggestions for you are farm the same knight or farm the knights in Lothric Castle; Red Eyed LKs are the only way to get more than the game provides for free.

You can fight her early if you want. Shes in Lotric Castle, just kill the lady and touch the thing behind her. If you don't drop her early you will get brought back to get when you drop the 4th lord of cinder
