I figure that means I should start on a 1.21 server but I'm curious if I started on a 2.4.3 or 3.3.5a server would I still be able to see all that content from classic, including raids? Or do people just skip them in favor of higher level stuff? I'm sure on instant or fast exp servers they do but what about x1?

The raids from previous expansions are obsolete in new expansions and later expansions make the leveling easier so you won't get the true experience. . If you want to start at the beginning then 1.12.1 is what you want.

gold? do you mean just money in general? I don't believe quests give a ton of money as your general source of income is going to be through mob drops, but if the quest log says you're meant to receive money and you're not receiving anything, then yes it's a bug.

It relies entirely on content i.e. gear available and the particular encounter. There is no top DPS although some do better than other generally throughout all content. Which tier/encounter are you wondering about specifically?
