Respec. Put that Faith to 30 Luck. Put Hollowing on it. Get 10% increased AR than Refined as if you were 40/40. Get Hollow offhand too.
Put Carthus Rouge on it

Rapes shields. Even greatshields and party attempts. It's a single-shot 360 degree guardbreak that goes off in 10-11 frames and buffs your damage with a multiplicative boost for the riposte.

I've recently fallen in love with the dagger moveset. What's the best weapon with it? I've been using a bandit knife at the moment, but the bleed isn't doing much for me since I'm not a hollow build.

But some other infusions are also used and can do well such as hollow or chaos.

Really the only 100% useless ones are poison and bleed. Every other one has some kind of use in some way for some builds.

What ring setup should I be using as a pyromancer?

I'm using Witch's, Great Swamp, Flame Clutch, and Sage's, is that pretty much what I should be using?

Hollow gets 10% more AR, sometimes more depending on the weapon than Refined. Even if you have 40/40.

Plus it gives you free luck. So you can save yourself 10 levels for capping it. And it can ALWAYS be buffed with resins, or magic. And if you're bleed, it can be buffed with Carthus Rouge. Meaning you can get off two hit bleeds.
