Can any parryfag clear up something for me?
The three main ways of avoiding damage in the game are blocking, dodging, and parrying [with positioning as a fourth, minor way], and of the three, parrying by far seems to be the riskiest one, in that it requires far more accurate timing than dodging while also leaving you open for possibly lethal damage if you mistime it. To top of it, not all attacks in the game can be parried, and the parry windows [both for the item you're parrying with and the particular attacks you're parrying] are not exactly crystal clear.
So my question is, assuming my assessment is right, is the choice for parry just a simple case of gitting gud enough to be able to instinctively counter every boss and enemy's parriable attacks, coupled with the patience of a saint to discover which attacks are parriable, which are not, and what their timings are? Or am I ignoring some aspect of it?
The risk-reward ratio doesn't seem so attractive compared to dodging+punishing.

Parrying is literally: get gud.
It's some realm of fuckery in online PvP, especially in 3 where the parry frames on many things are fucked.
High risk but the gratification of the damage of a riposte versus anything else in the game is well enough to start being a parry master.

I got Invalid Game Data a while ago, but I'm pretty sure it was because I tried to use the Sword of Avowal online. It can sort of be equipped like a normal weapon, unlike most of the Cut Content, but it still doesn't show up correctly online.
I haven't gotten banned though, and I did use First Person online, so I'm pretty sure it was just that. Use at your own risk though.

in DaS1, parrying was piss-easy in PvE, but harder in PvP
in DaS2, it was the opposite

Yes, it's a lot of trial and error. Just learn how to parry Sulyvahn and Gundyr, they're the only parriable mobs that you can't just R1 mash down faster.

Everything else was nerfed heavily. FAP? Destroyed. Havel's? Destroyed. Chloranthy? Not even half as useful due to changes. Hornet ring was the only one to get BUFFED by having everyone having lower hp totals across the board due to the FAP nerf, and Vigor falling off mid 20s
