I want to use Black Knight weapons and those can't become Refined anyway so hopefully 40 STR/25 DEX gives me a good amount of extra damage.

40/25 will be fine for those. STR softcaps at 40, so even with the lower scaling you get more AR boost from the DEX instead of investing any more in STR.

I run all of my builds with 19 End.

FGS gets two L1s and two rolls with 110 Stamina, more than enough in my experience.
