for the menu bones you want to go as fast as possible, remember all you need to do is spam A and attack. Its really just a matter of going as fast as you can to minmize damage

Sans is way too tough, when I finally get to his second phase I can usually hold out a little but eventually I run out of healing items and the menu bones take me down to 1 hp while there's still a few hits left before his special attack, there's no way in hell I can dodge all of that perfectly.
I think I might have to settle for watching the genocide ending on youtube.
