Guardians are not the same as Grand Servants as well, if you compare Solomon and Dark Sakura then the difference is staggering. He can blow up the world, while DS is probably more of a city-wide threat.

A guardian is given as much mana as they need to accomplish a task. In Fate/Zero he didn't need more mana than an average servant to kill a simple human, but when they're summoned to protect humanity they have infinite mana and power.
