She's a ton of fun, but not the best against higher-level teams. She's great for having fun, annoying people and wiping out teams that are distracted. Use her jet boosters as much as possible and always use E while advancing. Don't use her as a conventional tank, she's more of a close-range assault character. Use jets to slip behind enemy ranks and pick off the squishies, then jet out of there as they turn on you.

She is a lot of fun but you have to be pretty good with her to do anything

Her cannons only do real damage at basically melee range and she doesn't have much health so you have to use her boosters and defense matrix well to be effective

also as you move up in levels people are less and less dumb and stop dying to your ult so you have to get creative to net kills with it

Because he's shitty. You'll consistently get cheap wins against shitty players who don't know how to counter him, and die almost instantly against people who know how to play properly. He's nearly always played by new players who try a few people and realise they can win with him. His game is one-dimensional and nearly every character has a reliable way to kill him once you realise how simple he is. Don't waste your time with him.

A good one is literally uncounterable especially on defense, on most maps, without having to enter his magical shithole and get wrecked by him.
You cannot tank his spam to let the damage dealers kill him because he's slippery with the mine and he melts anybody who gets near the grenades.

How the fuck do you counter Junkrat without another equally good Junkrat? Pharah isn't an option, given that both Soldier and Widowmaker completely shut her down and they usually still hide in places where it's hard to aim with her.
