Well Undyne is a no brainer. Asgore would be cool and I guess Toriel would be quite powerful by monster standards as well. The last one would be Papyrus I guess, I mean if they're fighting against other monsters then there's no problems. Papyrus would fare quite well against the psychological hazards of the dungeons while also being quite sturdy, Undyne tanks and Asgore and Toriel fire away..
