1. Register on a private server that hosts the same game client you have.
2. Copy their realmlist URL. This can usually be found on the main page of the website or on their registration page.
3. Look for a realmlist.wtf file in your WoW folder. This may either be in the root folder, or inside Wow/Data/enUS/
4. Open the realmlist.wtf file in a text editor such as Notepad and paste in the realmlist settings of the server. Make sure it starts with 'set realmlist' followed by the realmlist URL.
5. Launch the game from wow.exe and enter your account info.

You will need a clean wow.exe and dll files if you downloaded your WoW client from XYZ server. Check the clients section above.

Between Vengeance, Theatre of Dreams and Warmane (i don't mind if its TBC or WotLK) which is the most populated (with normal population and/or /wpsg/) and the most stable (i don't ask for perfection, just playable experience)?

I think it goes as high as 2k, not sure how good Warmane is or how the staff deals with issues.

Warmane has the biggest population even though they fake it by 50%. Their scripting is average and bosses have custom tuning.
Tod has much better scripting by far but a much smaller population of around 1k to 1200. It also has a wpsg guild. The guild on warmane is pretty much dead.
Vengeance is a completely shit server and that guild is dead also, don't wate your time

their raids are pretty well scripted and it's a progressive server, only thing that could be considered a downside is the expansion for some people
there's more than enough quests working to get 85 without any trouble

What professions are best for a resto shaman in WotLK?

blacksmithing, jewcrafting

Would it be better to do one of those with mining? Not sure how the AH is on Dalaran
