Do you really have to level all of the DoH and DoL classes to become a profitable craftsman? I mainly only have interest in weaving and maybe carpentry and goldsmithing, but I've been told to level up everything or it will be an enormous Gil sink and I won't ever make a profit.

I'm fine with leveling gathering classes, but I don't have much of an interest in any of the other crafting classes as it currently stands

You don't need to worry about cross-class for gathering but yeah, crafting needs everything if you want to be good at anything.
