For some reason whenever I press b, my game completely hits the shitter and the fps tanks to 2. I'm not entirely sure, but it has to be ENB related, as I can't imagine anything else being able to do that much damage.

In the CK create the texture sets (following the steps in this tutorial: Using Texture sets for Skyrim) for all the custom textures you are going to use with your race:

The head textures (one texture set for the male textures and another one for the female ones)
The eye colours (one texture set for each eye colour)
The brows (one texture set for each brow type)
The body (one texture set for the male textures and another one for the female ones)
The hands (one texture set for the male textures and another one for the female ones)

If I leave out Eye color texture sets, will it draw from the pool of my installed eye mods? Same with Hair?

Also, what can I do to tell which texture is a Diffuse/normal/etc?

If you don't make the custom eyes it will default to the vanilla textures from your game, not the mods. Don't be lazy.

I did about two years ago, kinda feeling like maybe its time to head back and relive those times. Been hoping for Skywind or Beyond Skyrim to take me back, but I dont think it'd be the same as a full on vanilla Morrowind experience.

Skywind's bound to fail because it's built in the Skyrim engine. Skyrim has many mechanics that simply aren't desirable for a Morrowind recreation.

Vanilla Morrowind is always fun, even more fun if you mod it.
