You don't actually need to measure how you utilize your stats on 120 because 40/30/40/40 will always be the norm. 134 stamina to 148 makes very little difference. You'd better use that slot for chloranty, making your chances of getting negative stamina way lower.

Most character stat edits are safe offline now.
Fromsoft realized shortly after release that it was possible for people to change someone else's stats with CE, thus softbanning them, so they took most of the system down to prevent that.

Most cheating offline doesn't trigger invalid data anymore, hence why people at sl120 with 99 in every stat are so common now.
