Those defences could easily be undone by efficent sapping.

Well, the moat should help to moisten the ground and make it much more painful to tunnel.

But really the only real defense against sappers is counter-tunneling.

Sapping is historically extremely under rated.

Sappers are defeated by counter sapping. Sappers tried to sap the theodosian walls and were beaten this way

That still means the cannon pierced the walls and it was the infantry that held off the besiegers.

That being said artillery is the answer to just about every entrenched position so whatever.
