I played the KOTOR games. In them, if you brought the right companions with you you could end up with special dialogue and missions and, eventually, you'd be able to turn them into jedi.

Is there anything like that in these games? Is there any reason, other than usefulness, I should pick one character over another? I know there's "romance" aspects to the game, but I don't know anything else. Will using one player more often unlock anything in them?

there isn't really any difference. just a bit of special dialogue, but it's very sparse. there are a few missions where you are forced to take certain characters (like their loyalty missions in ME2 or thessia in ME3 where you have to take Liara), but other than that there isn't anything like the KOTOR stuff.

I never liked the insta-kills some enemies in Mass Effect 3 had. It makes no sense in an RPG, a genre where stats is more important than what would make logical sense.

mass effect somewhat resembled RPG only in 1

Depending on how fast you slipspace drive is, eezo is better for short trips, while slipspace drives can run until you tell it to stop (assuming you have the electrical power for it).
With the human Shaw-Fujikawa drives only being able to do 2 lightyears per day, mass effect cores are obviously better within cluster, even if they have to discharge.
Covenant drive cores, though, can do up to 912 lightyears per day.
