Both Karna and Arjuna are not only powerful because they were in their myth (a justification that it would be enough is in a way as Fate is also about that) but their characters are also fundamented in what a hero (and dying as one or been seen as one) actually is supposed to be and how power is not the only thing that matters, but circumstances, choice and even outright luck.

Both were really talented, both were really strong, both were demigods and sons of really important gods, but at the end one was hailed as the greatest hero of his myth while the other was shunned most of his life, cursed and killed while being deprived of a real conclusion to his last battle in a complete unceremonial way that denied him his true worth. Add that the one who won and was considered the greatest, noble and righteous hero of his myth actually felt really hard to live to those expectations placed unto him since he was born and considered the other his antithesis to the point he did everything in order to kill him, just for immediately afterwards feel that he is not worthy of everything because of that.

They are actually interesting and nuanced on their own and bring points that fit and complement others made in the Fate series, you are just being too hard on them because of that incredibily subjective thing with Cu and Emiya being a favorite of yours.
