I'll probably do SJ or Nocturne after that though.
STR is better in every SMT game that isn't IV.

What level are you? You should max out VIT/AGI and then go full STR.

Yeah, definitely go VIT/AGI and then STR. A lot of people recommend leveling up STR since the beginning but STR is not that good in I, it only increases your power by one and sometimes it might give you a health boost but not always.
You're gonna be using guns for most of the game anyway.

The Rainbow Serpent (Yurlunggur) is the only one I know about, those resistances in Nocturne were a godsend.

I was actually thinking about this a few days ago. I'm fairly sure there isn't any demons from my country in this series. Which is sad, I'm from a small city and always liked hearing local legends and monster stories. Would be cool to make a party with these guys.

It's not a matter of understanding or not. For instance, I play the DeSu games with voice Off because they're horrible. If they had at least a JP dub I would see if that was better or at least more fitting of each character.
Still, IV had a pretty great eng dub so I expect Final to have something of the same caliber.
