Presumably because the artists who are responsible for making the characters thought the model we now have was their favorite and the best fit for an easily recognizable hero. Like it or not, racial coding is a really easy way to make a (human) character stand out.

Guldan and Master Skin Guldan have a relatively huge offset of face textures. If you swap them back an forth you can see his face in the master skin is a little to his left and his upper lip doesn't align with his front teeth anymore.

And we concluded that with the appropriate build Arthas would probably win again lol

We assumed the duel would take place at level 30 with all possible quests completed

We also know that this duel would be inexact because Arthas faced Illidan as a Deathknight and not as the Lich King
