Honestly Record Keeper doesn't hold that much appeal for me. You're leveling equipment and clearing hard dungeons just to level more equipment and clear harder dungeons.
Brave Exvius at least has a bare-bones plot but from what I hear it's not going to move so I'm just thinking FF is stumbling on this whole mobage business.

you can't fix what isn't broken

Remove it because FFVIII outside of the OST is shit

enemies scale based on junctions, can't fix the trash tier story though, shame cause the character designs are god tier

-add actual equipment
-rework the enemies scaling with your level thing (maybe as an option)
-smooth the gameplay a bit, fix GFs

that's pretty much it

Trash enemy scaling. Give them all set levels of adequately increasing difficulty like every other decent RPG.
Trash junctioning to statistics. Give characters a natural stat growth like every other decent RPG. You can leave elemental, status, and ability junctioning, I guess.
Make limits a guaranteed time-released thing like every other decent RPG so mashing triangle with Aura on isn't the right strategy all day every day.

If you want to play 7 just go play 7
