I just ended up changing the color of the background after fucking around with the bullet with no success.

All that stuff flying past really fast looks more like bullets. While the actual bullet is tiny and and slow.

Make all that junk flying past further back, so it's very clear that it's not part of the foreground. And make the ship's bullet at least 3 times bigger and 2 times faster.

A bit tougher to implement, but try forcing the player to do rapid hit motions with the mouse - if the force (speed of the mouse) doesn't reach a threshold, the blade gets stuck, you pull back and try again. Should feel pretty good.

Is a finite state machine the best choice for controlling a character? Is there any other thing that is easy to read, write, and expand on?

Not specified in Revelations which is what I'm referencing, and it also isn't a true "god", the whole point of it is that the lamb is tainted, so it being a female makes sense in the context.

Yes, but don't use Unity's animator controller to control character operations. I ran into a slew of troubles with that.
