As for the dolls, I imagine the babies don't play a signifcant role, but the dolls are going to have some spooky, non-lethal action. Like JJ or the poster of Freddy tearing his head off.

If it takes place in the future, then probably Springtrap. If it doesn't, then who the fuck knows, it can't be any of the revealed characters, since even Nightmare Fredbear wasn't shown fully until the game actually came out. So i'm placing my bets on Springtrap, or an entirely new character that Scott hasn't copyrighted yet.

I remember reading they're the ghosts of employees who died in the accidents that caused the spring suits' retirement, but I don't know if that's something Scott said or just a theory.
