You know, when Asgore first asked Frisk to be the ambassador, I thought it was just another jab at how dumb and clueless he was.

But when you think about it, Frisk was acting as ambassador for the human race from the moment he fell in, and he succeeded spectacularly at it. Several times throughout his journey, he convinced monsters who sought to capture or kill humans to give up that desire. While Asgore was initially ignorant about everything and made a fool of himself, Undyne's radical change in perspective is not something Asgore would have missed. "If this child can change my stubborn guardman's beliefs on humans so easily, then perhaps he can change humans' beliefs on monsters." I believe is what he thought. He's not the king for nothing.
