It is 5 tickets per full upgrade you were right the first time. You would need to do each deviant level 3 times for a total of 30 hunts to make a fully upgraded deviant armor set.

You need 5 tickets to upgrade the armor. You get 2 tickets every time you do the specific quest.
if you do the quest one time you have 2 tickets if you do it two times, you have 4 tickets (which isn't enough) if you do it three times, you'll have 6 tickets, which is enough to upgrade the armor, and you'll have one ticket left over for a weapon.

Both Lance and Gunlance are the kind of weapons that are mobile around the monster (their hops and sidesteps allow them to keep re-positioning and be on the offensive) but gunlance specially has a problem of moving to the monster in multi because of distributed aggro.
What you can do to remediate that is use Absolute evasion/readiness and/or blast dash to keep up with the monster. Adept is the best style as you gain a follow-up attack to the guard that can rack good damage if you manage to slam.
Use full bursts and shelling between pokes to build heat, don't bother locking it with wyvern fire, your main attacks will be the Adept guard attack+slam, as you'll barely have time to full burst at online.
In solo it depends on your build, you can make load up+ artillery builds and focus on full bursts/shelling, but if you make a set focused on crits/attack up/sharpness, you may as well keep the strategy above and only use shelling to keep the heat in red.
