Freighters that you can walk around in, more variety with outposts, and more in depth crafting is all I want. A few more things to fight might be fun too, but I don't really care too much about that. Over time maybe I will get some of those things through updates.

So I'm on the fence about getting this game. I remember a lot of emphasis on how BIG this game is, but that made me worry that it'd be TOO big. Like, "impossible to find other players" big and "never see planets you claimed again" big. Just how big is this game and am I just overthinking or are those actually possibilities?

It is so big that 99% of the game will never be seen. You will never see another player. You might go back to some of the places you've been before in your immediate vicinity for resources but once you get far enough away there's not much point going back again.
