I've been doing a thing for a group of people in my neighborhood for a long time now.

The workflow is unrelenting and if I take a break it only piles up.

You're not giving me enough information about it. Is it something really important for the neighborhood? Can they go on without it for a few days? Why isn't it your place to speak?
If it is too stressful, just stop. Tell them anyway. If you really want to keep doing it, tell them to tone it down and to ask you to do it every once in a while again. That's what I would do. If it is crucial for them, they'll just get someone else to do it when you can't. Hope it helps.
