For the first one, hop onto a collapsible platform and ride it out. For the second one, you'll get carried to another platform that you have to push to the right and then jump on. There's technically a third one but you only go on it if you jump off one of those swinging platforms

Get on the Ice Platform while you see falling. You got to jump onto it to make it fall then to push it right onto the slope if its the 2nd one. After that hold down for the ZIP while riding.

The premise of Sonic was rolling into a ball. That's why the runner-up animal choice was an armadillo. The game being fast is just a side-effect of Yuji Naka's Ferrari fetish combined with his new dot matrix curve tracking programming. The speed of the game just got played up in marketing because it fit into the concept of Blast Processing and Genesis Does What Nintendon't.

Sonic's character was in fact created from the idea of "SPEED". His name was chosen to describe that he is very very fast. His name would have originally been something lightspeed related, but they couldn't think of anything that worked. So they went with the next best thing.

That person still misunderstands the purpose of speed in classic Sonic games though. The point isn't just to go fast automatically. You have to earn the right to go fast by getting good at the game. But, again, Game Grumps thread.

Honestly, I never agreed with the mentallity of "earning speed". It just feels like it goes against Sonic's character to me. Sonic himself doesn't have to work hard to gain speed because he has super speed. He can instantly accelerate to mach 1 and beyond, so why would gameplay need to be based around having to work your way up to and maintaining those speeds when Sonic in reality can go that fast effortlessly?

Sonic was given the name "Sonic" because it was the next fastest thing after Light, and they couldn't come up with a good name meaning Lightspeed, so they went with a name based on supersonic speed instead.

Acceleration is based on ring count in those games.

Acceleration is based on rings. The more you have the faster you reach mach state. And you still have to run for a bit.

Point is, Sonic has super speed. He's not just some gifted runner, he's basically The Flash, and that's been a fact since his conception and debut. Having to work your way up to being fast just doesn't sit right with me, since that means that at the start of the stage you'll be moving slow and it'll take time to go fast, yet outside of gameplay Sonic takes off at high speed instantly and accelerates at an accelerated rate.
