I'd spice up the mountains and go with the countours and plunge down the canyons, then get some high speed sections to contrast.

Right, OP's track has a section at least 1.5 times steeper than that.
Not sure about that. See that lowest point on the Nordschleife? That's at Breidscheid at around 300 m above sea level. Now see that point to the far left? That's Hohe Acht at above 600 m above sea level. Steepest incline is 16% up there. 11% down.
And that's at least 5km between them. Meanwhile if OP is going clockwise like every other track then it's about 600ft in less than 1km. If the track is counter clockwise then it's still a ridiculously steep descent and will destroy the brakes.
