There was the first Jap patch that nerfed FUGS into the ground, and the first post-international launch that buffed greatswords along with some other things and later the MLGS.

Man I remember back in the Dark Souls 2 days complaining during the wait for the DLCs that From wasn't patching shit enough and made some stupid balancing decisions but in comparison to what we're getting now those were a godsend in that they actually attempted to deal with over-dominating weapons. If we're not getting a general rebalancing patch on the level of the first Sunken King patch by the time of the DLC I don't know what to think with this game.

that poise bs thing is not a big deal since you can avoid very easily cause it's obvious what they're doing.

But to fix that they should make perseverance a weapon buff like warcry if that's even possible.

you'll have to sacrifice quite a lot, these two weapons aren't too compatible

demon fist doesn't scale with dex, dark hand's physical scalings aren't too worthwhile
they're C while the dark scalings are D, but the dark base damage is much higher, so its scalings works better anyway

Sorry I forgot the Demon's Fist had no Dex scaling. You will want at least 40 STR still though because the Fists have most of their damage in physical. Depending on what SL you're going for just spare what you can in INT/FAI but it really won't add too much, 40/40 in both only adds a little over 40 AR in fire damage which isn't much. But you'll want 40/40 physical if you want to optimize the Dark Hand's 'damage' though you will never hit anyone with it at the SL needed for it as the Dark Hand works best as a twink weapon.
