Vex may be/probably are aware of the Guardians, and can probably see them in their future projections, but we often break their predictions.

They probably saw the taken as a threat and thought:

So he started transmitting as much data as possible back to the overmind, and in an attempt to buy itself time, created the closest approximation of Oryx that it could - and it created like a 7-year-old Aurash, the girl that Oryx was before she became Ascendent, and Aurash looked around, looked at Oryx, recognised him as herself, and basically broke down and screamed "WHAT HAVE YOU DONE?"

Oryx, of course, sort of just cocked his head and decimated Quira, but still

No they can predict and fuck with the future and past. But not a single one of their predictions has them surviving. Eventually they get wiped out. Either by us or something else we don't know.

Because we fuck with the rules of reality just by existing we are impossible to perfectly predict.

They get rekt by the taken because like like us the Taken and the Darkness are impossible to completely predict.

They allow Praedyth's message out because like us the taken can fuck with them using the vaults powers. Plus they see us shit on the taken regularly so they took the easy way out.
