There is no tutorial that will teach you how to specifically make something like in your pic. All the tutorial will teach you is how to do box modeling.

Take a notepad and write the shortcuts down. You need to know them unless your goal is to stay a deviantart-tier artist.

Don't just watch these tutorials but try to actually do something on your own. Did you just learn about how to put a cube in your scene? Make a house. You learned to unwrap that cube? Unwrap your house. Your house looks like shit? Start over and git gud.

Learn about different modeling techniques, from sculpting to single vertex extrusion and use the one that fits you.

The blender cloud has a pretty good rigging course (and courses about other subjects). You have to pay for it but you can easily find it in other places.
If you're serious about wanting to learn though I would encourage you to pay for it, it'll motivate you to actually do something instead of procrastinating and watching tutorials to pretend that you're making progress.

Just draw your own pictures to replace the head. You can do that for every body part. Other than that you just need good topology for deformation, which just means more quads in areas where folds happen IE an elbow folds so put more quads there compared to a forearm.

better, you should reverse and format if you can though.

switch to verts. select vert, something like ctrl to lock axis. drag verts, right click divide verts. select verts and rightclick(add face). do that for a while...then unwrap model, move peices till not overlap. paint peices. and...vula model. add bone,add armature. bought as far as I got before I got.
