I happen to be an expert on this subject. Use the Skykids mod but change the body and head size via racemenu so they have adult proportions. That's how I made my dude.
Protip though you'll only be able to wear vanilla and DLC outfits since no other meshes are fitted to the body.

I wouldn't be playing Skyrim if this thread was not here, because then I would have to rely on people with such drastically different taste from mine to give me good mods. It would have taken me forever to find Vigilant on my own.
I'm not going to deny that community is a big draw to this single player game, but there's stuff that I enjoy, but even when I am enjoying a single player experience, I am also enjoying the fruit created by a community of people playing modded Skyrim.
