There are plenty of 5 cyl cars. Volvos and audis. Don't know about 7 cyl though on production cars. V8s are just better and much more established now.

Why is it that I6 is more popular for diesel? Easier piping and nobody cares about cabin size in commercial vehicles?

Fewest number of cylinders to get inherent first- and second-order balance. It's important when each cylinder has approximately 2 L of swept volume.

Becuase bigger the engine, the bigger the counterweights you have to use?

So why not use a design that's the most balanced, and least complex.
