One Aussie I know had a decent time on Lamia with Pingzapper, though the other one is firmly settled in Tonberry and says its pretty much perfect there, at least far as the community goes.

It has the highest english speaking population amongst all of the JP servers so it's your best bet. Pingwise you may need a tunneling service depending on where you are in aus, but a sub to pingzapper is only like $4 a month.

I couldn't recommend an NA server, not even balmung, due to the massive time difference.

The GP can help but mostly you're going to want the accessories for melding to make fish catching easier. Though the melds they can take are smaller in that regard it all still helps.

Ixal quests are pretty decent to level your crafting up 1-50 and moogles after that. Crafting is pretty cool at higher levels!
