It's because of the rotation of the the crank. All that force goes into the mounts which do their best to hold the engine still. This causes the frame to flex if their is enough power instantly.

is it to do with the mounting points allowing flex so it doesnt crack or whatever or is it just due to the nature of full chassis not being as rigid under heavy loads?

the reason is it is how it is designed
they have weight limitations, cost, and if you make a full frame too stiff ride quality suffers.
