It isn't just boomers. We have lost a ton of young guys that came out to autocross. Now they're taking their Hondas, GTIs, and Subarus to do high way pulls. Or stancing them to show off at Cars and Coffee.
We had one late 20 something show up for a few months with a brand new Z/28. Couldn't drive for crap and stopped coming. Showed up with DRs to get it tuned for nitrous.
drag racing is the cheapest and most open track racing enterprise there is and still has enough people come out to be entertaining casually, especially in the US

That aftermarket includes plenty of manual transmissions, bell housings, clutches, flywheels and other parts to make yourself a fine manual race or street toy.
Car culture is flourishing, not destroyed. You can buy more speed parts for more vehicles now than at any time in history. You can still get new parts for a 100-year old Model T if you want to build a gow job (predecessors to hot rods). Every era is covered.
There's no "automatic car culture". Nobody cares. Cars are tools and only on Veeky Forums is there a manual trans fetish.

Scat Pack is 485hp, comes in manual, so does the SRT 392 trim. Both are worth having. The Hellcat isn't worth having imo, you can only even drive it in the summer. Cant take it in the rain, forget about the snow. Scat Pack is legit the way to go, or the 392 SRT

What I hate is that boomers normalized being in hundreds of thousands of dollars of debt for life making commodities like homes, cars, educations, etc explode in cost with no hope to come down. You'll never be able to buy a new car cash again because there's too much money to be made selling auto loans. It's getting to the point where you almost need a second loan just for the down payment for a good house in a safe neighborhood.
Auto loans are going to crash hard within a decade, I'm betting within 5 years. Get one now if you want on. It's following literally the exact same process as housing loans.
