Well, people that come to live in places where other cultures are usually tend to assimilate their knowledge, sometimes even their history, and base their foundations on them. Look at the ancient Romans and Greeks or Romans and Etruscans.

The humans were able to step into Thedas thanks to the presence of the Veil and found the elves' civilization utterly ruined: they seized the chance and stole everything from them, but the thing is the elves have been there since forever, so they obviously had to "did everything". Thedas as a whole is based on the elves and dwarves' cultures, because they are the most ancient. I think that actually makes sense.
