Pretty much all enemies that fight npcs reset their hp every few seconds until you hit them once
The exception being the fiends when you summon the 8 masters

There's not too many times that happens though. Like Dochan and the Stratus Agents both generally only fight trash mobs. Off the top of my head, there's only two or three times you can sit back and watch two NPCs fight for an eternity. Once in the Scorching Sands, another time at the Brightstone Occupation map, and this one in Skypetal.
