When I did it I used the open faced helm mod, deleted everything except daedric with tes5edit, then replaced all the vanilla meshes with newermind's equivalent.

The first part has to be done because by default the helm doesn't have a head underneath.

jewelry should be your go to, I use dwemer bows to fill out the rest since they're easy to make, help you level pretty well and dwemer ingots are easy to get in mass quantity.
