The only things that are 100% canon about Gaster is that he built the CORE, yells in wingdings, doesn't exist because he fell into his creation due to an accident and that he's been researching growing absolute darkness for some reason. We don't even know how he looks like.

Actually, it was more than that. Turns out Undyne originally was Shyren's sister, but then the mengelizard lured her into her lab with nice cream, knocked her out with her trusty baseball bat and performed various experiments until she became what she is now.

the early concept of undertale reminds me of a lot of these aus. besides the porn bits obviously. toby had his team and these aus are just for fan purposes and made by random people to suit their thoughts/desires so there's no way the aus will ever match undertale.
maybe a long ways down the road there will be some kind of spiritual successor to undertale.
not sure if a spiritual successor will look better or worse honestly because the shitty sprites are part of the charm.
